Description
This class is designed for the more advanced pizza maker. This class gives you a better understanding of  different pizza styles. Other topics covered in this 3 day class are dough chemistry and functionality of ingredients.  This course will give you the confidence to make great pies and leave you with a better understanding of classic Italian pizza.
Curriculum
Day 1
  • Theory: Intro to grains and flour – Mixing and handling pizza dough made with Italian “00” flour and the Italian starter “Biga”
  • Practical: Introduction to pizza equipment needed for pizza production, calculating water temperature, dough mixing and handling
Day 2
  • Theory: Dough chemistry, direct and indirect dough methods.
  • Practical: Dough mixing, dividing and handling; dough stretching, topping and baking
Day 3
  • Theory:  Preparation of traditional ingredients for toppings
  • Practical:  Focused training on wood, gas, and electric ovens, dough stretching, topping and baking

WHAT TO EXPECT PIZZA CLASS

We ask that you arrive no later than 8:45 AM – class starts at 9:00 AM – 5 PM
