This class is for the more advanced pizza maker. This class gives you a better understanding of  different pizza styles. Other topics covered in this full day class are dough chemistry and fundamental roles of your ingredient base.  This course will give you the confidence to make great pies and leave you with a better understanding of classic Italian pizza.
Curriculum
Day 1
  • Theory: Intro to grains and flour – Mixing and handling pizza dough made with Italian “00” flour
  • Practical: Introduction to pizza equipment needed for pizza production, calculating water temperature, dough mixing and handling
Day 2
  • Theory: Dough chemistry, recipe for Classic Italian Pizza, and introduction to yeast
  • Practical: Dough mixing, dividing and handling; dough stretching, topping and baking
Day 3
  • Theory:  Preparation of traditional ingredients for toppings
  • Practical:  Focused training on wood, gas, and electric ovens, direct and indirect dough preparation using various types of mixers, dough stretching, topping and baking

Day 1
  • Theory: Intro to grains and flour – Mixing and handling pizza dough made with Italian “00” flour and the Italian starter “Biga”
  • Practical: Introduction to pizza equipment needed for pizza production, calculating water temperature, dough mixing and handling
Day 2
  • Theory: Dough chemistry, direct and indirect dough methods.
  • Practical: Dough mixing, dividing and handling; dough stretching, topping and baking
Day 3
  • Theory:  Preparation of traditional ingredients for toppings
  • Practical:  Focused training on wood, gas, and electric ovens, dough stretching, topping and baking

We ask that you arrive no later than 8:45 AM – class starts at 9:00 AM – 5 PM
