We are pleased to welcome the Fusco Twins part of the new generation of pizza makers!

Originally working in the postal service of Milan but knowing that this was not their passion, they asked themselves what their next step would be; and it always came back to pizza. This is how their adventure began!

They were not born into a family of pizzaioli, yet, passion and commitment have enabled them to realize their pizza dreams.

The Fusco brothers are trained as pizzaioli thru Manidoro School and the Associazione Verace Pizza Napoletana. But their education didn’t stop there. With support their parents who are involved running the operations of the business, they went in search of best and most traditional local recipes, starting by perfecting their own family recipes and becoming engulfed in researching the rich history of Italian pizza. Their research brought them to the best products in Campania, always selecting the best and freshest ingredients. Today they are renowned for their pizza but specifically their gluten free breads and pizzas.

CURRICULUM

  • VARIETY OF GLUTEN FREE BREADS & PIZZAS STYLES

Your day will start in our classroom at 9AM, then move to the dough room and finish in our oven room, stretching topping and baking.

  • Mixing and handling pizza dough made with a special gluten free recipe
  • Preparation of gluten free pizzas and bread
  • toppings and ingredients
  • Sanitation and handling of gluten free ingredients
  • Dough stretching and topping
  • Baking in an Italian electric deck oven and wood fired oven

WHAT TO EXPECT

This is an all day class split up into a Theory portion along with Hands On Experience with dough, tomatoes and sauce ingredients hand stretching topping and baking.

  • Attire – you will be given a t-shirt so please write your size in the notes section when registering 
  • Long pants and non-slip shoes – tennis shoes pref. Chef clogs not recommended – no open toed shoes
  • Long hair tied back
