In Mastering Pizza, James Beard award-winning chef Marc Vetri tackles the topic with his trademark precision, making perfect pizza available to anyone. The recipes—gleaned from years spent researching recipes in Italy and perfecting them in America—have a variety of base doughs of different hydration levels, which allow home cooks to achieve the same results with a regular kitchen oven as they would with a professional pizza oven.

Mastering Pizza also dives into other fundamentals—pizza stones, baking steels, flour types—to help home cooks find the best tools for getting the ultimate crust, be it airy or crispy. Vetri also offers recipes for popular standards like Margherita and Pepperoni while also featuring unexpected combinations like Butternut Squash with Crispy Sage and Taleggio, Fresh Pears and Guanciale, Sicilian Tuna with Shaved Vidalia Onion, and Crab and Roasted Peppers.

MARC VETRI is the chef and founder of several acclaimed restaurants in Philadelphia, including Vetri Cucina, Osteria, Amis, and Pizzeria Vetri, which now has multiple locations. Classically trained in Bergamo, Italy, Vetri is known for bringing a bold, contemporary sensibility to classic Italian cooking. He is the author of three other cookbooks, including Mastering Pasta. Outside the kitchen, he is the driving force behind the Vetri Community Partnership, a non-profit whose mission is to help kids experience the connection between healthy eating and healthy living.
