We love sharing our knowledge with everyone who loves cooking outdoors and has an interest in authentic slow smoked BBQ. You will not only learn how to cook exceptional meats on the smoker and grill, you will have a fantastic time learning it! 


Our classes are geared for everyone from the novice to the Pro Series BBQ teams. This is a high-end back yard class with Professional competition tips that will take your skills to the next level. What makes us different from others is that we gear our classes toward the students in front of us. We gather information, assess the students and encourage questions based on your needs, equipment and experience level. 


We teach everything from choosing meats and trim work to seasoning, injecting and smoking procedures. As the meats come off the smoker the students will be enjoying samples of the chicken, pork ribs, beef ribs, pork shoulder and brisket. Competition secrets will be told throughout the day! 



Moe Cason is a Des Moines-based award-winning BBQ chef and TV personality who has garnered multiple Grand and Reserve Grand Championships while competing in 35 different states. He's been seen as a contestant, judge, and star on Destination America's Pitmasters and BBQ Pit Wars. Self-taught as a pitmaster, he uses skills and authentic ingredients passed down from his grandmother, Margaret Cason. He's a veteran of the US Navy who served on the USS Missouri.


Bob Trudnak got his start in the outdoor cooking industry in 2002. He spent 20 plus years in the product design and manufacturing business while building his cooking career as a competition cook, judge and teacher. He has over 600 awards and has competed throughout the United States and Europe winning many state and national championships. He has taught thousands of students to perfect their craft in the backyard as well as on the competition circuit.

Bob has become a well known BBQ personality and has an award winning line of BBQ and pizza sauces and seasonings and is a certified Professional Pizzaiolo (North American Pizza and Culinary Academy).

Bob has cooked on military bases with Armed Forces entertainment and at food festivals all over the world. He loves bringing world flavors to traditional American BBQ.

His sauce and seasoning products are a reflection of his desire to introduce quality ingredients and well balanced flavors to all who enjoy cooking and eating fire cooked foods.
