What is Scuola Italiana Pizzaioli?
Scuola Italiana Pizzaioli was founded in the province of Venice in 1988 with the goal of training professional pizza makers. It is the only school that has certified its instructors through a formal process and operates facilities with classrooms and laboratories dedicated to hands-on training. Today, SIP has expanded worldwide, offering a complete educational program that ranges from introductory courses to advanced training for experienced pizzaioli.

The Certification Process
Students who enroll in certification courses at NAPCA receive both theoretical and practical instruction. Training covers dough preparation, fermentation management, ingredient handling, and oven techniques. The program concludes with an evaluation that measures both knowledge and hands-on skill. Students who complete the requirements successfully earn certification from Scuola Italiana Pizzaioli.
